Cherry Cheesecake

This month is my husband’s birthday, and I would like to celebrate it with his favorite dessert: Cheesecake! And because this past Saturday was National Cherry Cheesecake Day, I made it with cherries! Yummy!

Cherry Cheesecake Recipe:

Makes one 8" round cake
Prep Time: approx 15 minutes
Bake Time: 1 hour and 25 Minutes

Ingredients:

For the crust: 

  • 1 1/2 Cups of Graham Cracker Crumbs
  • 1/2 Cup Sugar
  • 6 Tablespoons of Unsalted Butter, Melted

Cherry Cheesecake Filling:

  • 10 oz Bag of Frozen Cherries
  • 24 Oz Cream Cheese, Room Temperature
  • 1 1/4 Cups Sugar
  • 2 Teaspoons Pure Vanilla Extract
  • 4 Large Eggs

Extras:

  • 8″ Springform Pan
  • Can of Cherry Pie Filling

Preparation:

    1. Preheat oven to 325 degrees F.
    2. Lightly butter an 8-inch spring-form pan.
    3. Stir cracker crumbs and sugar in a medium bowl until well mixed.
    4. Add melted butter and stir until evenly moistened.
    5. Press crumb mixture firmly onto the bottom of the prepared pan.
    6. Bake for about 12 minutes until set. Cool completely!
    7. Puree cherries in a food processor until smooth. Set aside cherry puree (should be about 1 1/4cups).
    8. In a stand mixer beat cream cheese, sugar, and vanilla until smooth on medium speed.
    9. Add eggs 1 at a time, beating well after each addition on slow speed.
    10. Add the cherry puree and beat until well blended still on slow speed.
    11. Pour mixture over crust in pan.
    12. Bake for 1 hour and 25 minutes, or until set and slightly golden around the edges.
    13. Cool cake for 1 hour and refrigerate uncovered overnight.
    14. Run a small knife around the sides of the pan to loosen.
    15. Remove pan sides carefully.
    16. Transfer cake to a platter.
    17. Cut into wedges and serve with cherry pie filling.

My Favorite Finds: April 2016

 This post is 100% my own opinion. I did not receive any compensation whatsoever.  I went out shopping to one of my favorite stores yesterday. A store that has great prices and products that I buy for my home.

It’s called the Christmas Tree Shop. They have many locations across the U.S. But not many. And I’m happy to have one near me. I got a few items to refresh my home without breaking the bank. I might not have gotten my whole house decorated, but these little finds did help. Mostly in my kitchen/dining room.

I’m excited to show you and tell you how much I got for them.This adorable pink metal planter I got for $4.99! It came with two bulbs and a growing medium disk. Can’t wait to see the results later this Summer when they bloom! Then this cute ceramic market berry basket for $3.99.  This ceramic egg crate which I love! Also for $3.99.I’m adding a little pop of blue to my kitchen with this light blue ceramic utensil crock for $6.99. How about this cute foux plant with metal pot? $3.99 and it looks pretty close to real!This adorable ceramic cow creamer!💗 It’s my favorite one of all because it reminds me of when I used to visit my grandmother’s home in Mexico. I remember everyone getting together to have a cup of coffee, and this little cow on the carton of her creamer siting on her little table. It brings good memories of my grandfather too whom we all miss so dearly. I got this little 7″ creamer right away for $2.99 and I feel like I have that little piece of Mexico with me.I fell in love with this soap dispenser as well. Got it for $2.99. Looking cute in on my bathroom sink. This tablecloth just brought it all together for $9.99.

All together I spent about $39.92.

Not bad right? And my tabletop looks so cute! Can’t wait to see my flower bulbs start to grow. I’ll keep you posted with pictures on my Instagram account @awesterner. Hope to see ya there😊.

Snow in April 2016

Welcome to my blog. Nothing says “Welcome” than a sign that says so. Am I right?I bought this sign with the intention of adding a beautiful plant in it and instead it gets filled with snow! How nice.So here we are in April, and it’s beginning to look a lot like Christmas. No really, I feel like we are in December. The December we didn’t have. It was a very mild winter this year.Either way, it looks beautiful and the kids are enjoying it.I hope you are too.Thank you for stopping by and taking it all in with us out here in New England. In case you were wondering what plant that second picture was; it’s a pink dogwood tree. Getting itself ready to bloom for me in May. It only blooms for a week and it’s over till next year. Picture taken in front of my home😊.
